    I liked it Its kind of an overview but that’s fair enoughThe reason it gets only 2 stars is the expert here made an egregious errormistake In the last section on Sausages and blood puddings she says you can get casings for sausages in three varieties Natural animal intestines Collagen made from animal and synthetic man made and not edible; ignoring for some reason ignorance of it perhaps? Cellulose made from plantsIf I a layperson in the meat making trade Hades not even a lay person a slightly interested and a little compulsive observer; if I knew about cellulose casings Thanks to Good Eats and Alton Brown then by God they should at least mention themOther than that its good
